Autumn is the perfect time to enjoy the short chestnut season. What to do with them? First, take ‘em out of their prickly shell and then cut a criss-cross on the skin on the round side of the chestnut. You need to do this otherwise your chestnuts will explode when you are roasting them. Preheat your oven to 200°C. Then arrange your chestnuts, cut side up on a baking tray. Roast the chestnuts for around 15 to 20 minutes or until the shell splits open. You can barbecue them on a hotplate or cook in a cast-iron pan too but make sure you turn them occasionally. Wrap your cooked chestnuts in a tea-towel for 10 minutes as this will make them easier to peel. Peel and eat – you can add salt or season in any way you want.
